I (Australian) been wanting to learn more Mexican recipes, and my LDR bf (Mexican-American) loves barbacoa, so I figured I’d try making barbacoa from scratch as the first recipe I’d try properly.
I found the recipe (pics 2 & 3) online, but I don’t remember the website link (I forgot to copy the link before I got rid of the tab on my phone😅).
I followed the recipe exactly, using a slow-cooker and I really like the flavour, however I feel like there’s something missing, but I’m not sure what it is exactly.
Any tips or ideas on what I can do differently, or perhaps ingredients I could add? Any feedback is appreciated.

Lazy man version: drop the Chiles, get a cow’s tongue, drop everything in the show comer, cook overnight at medium.
Next morning you’ll be the hero we deserve.
Depending on the size, you’ll get around 600gr of pure bqq
