I love mapo tofu! I’ve been making it for my partner and I at least once a week.
For mine I sauté 1 bulb of roasted garlic (mashed up), a small spoon of minced ginger, 8-10 dried chillies, 3 tablespoons of chilli bean paste, 1/4 tsp of Chinese 5 spice in 1/2 a tbsp of canola oil. After a few minutes I deglaze the pan with 2 tsp of shaoxing wine. Then I add 1 cup of (vegan) chicken broth with 1 tsp of cornstarch and 1 tbsp of soy sauce. Once that is combined I add in 1 cut up block of medium firm tofu. I let that cook/thicken while I thinly slice 3-4 stocks of green onion which I add in and let cook at the end. Once I’ve portioned the mapo tofu I add 1 tsp of homemade chilli oil on top!
🤤🤤🤤🤩🤩🤩😍😍😍 I love Mapo tofu…..BUT I really like how my stepdad makes it. Hes Japanese and he makes it differently. So ive only tasted the one he makes. If you add that much salt, will the tofu taste salty.
