I’d eat it.
I would remove the rice, the tomato, the dressing and the lettuce. I’d add morita hot sauce, Oaxaca cheese, caramelized onion, drops of lime and cilantro.
I’d tear it up.

All things considered – the tortilla looks pretty legit
Tex-mex is NOT mexican food, not too bad but still looks American
