
Lately I’ve been making variations on these tacos and I really enjoy them. I mean, they are amazing. I did some research, though, and it doesn’t really seem like ‘Cecina’ is the right name. Is there a better name for tacos made of thinly sliced, marinated pork loin that is grilled?

depends on the region, i would call that adobada. in some regions cecina is mostly beef but in some there is pork cecina which is marinated like you said. you might even see it as enchilado.
Rick Bayless is very good about doing his homework. He has traveled Mexico extensively to learn his recipes and techniques. He does not make up fake names for his dishes. You can call it whatever you want, but I am sure that it is called “Cecina” in the place where he learned the dish.
Check out the Wikipedia page for cecina, under the Latin American section. It specifically describes this dish and says it is aka cecina enchilada. I’m only familiar with the beef version myself but it sounds delicious.
