KFC Thailand has managed to crack the code for one of the best wings. Spicy and zingy, these “Wingz Zabb” are a cult favourite. And I managed to recreate an even better version!

About Pai:

Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the YouTube channel Pailin’s Kitchen.

Pai was born and raised in southern Thailand where she spent much of her “playtime” in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.

After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via YouTube videos, her cookbook, and cooking classes.   1. OMG- so many creative uses for this seasoning came to mind! Toss shrimp tempura, fried calamari, dust fresh popcorn, sprinkle a little on a fried egg that tops noodle or rice dishes.
    Making a batch today! Your channel always inspires!

  2. Can't wait to make this for my wing loving son. If you were going to add MSG, would you add it to the spice powder or in the flour/cornstarch mix? And how much would you add?

  3. I lived in Thailand for a short period of time 10 years ago and there was a KFC 2 minutes away from me. I was so addicted to these wings I had to physically slap myself out of it. At that time they came out with the new wing bucket and my obsession got even worse lol I tell everyone I know how good KFC is in Thailand. Been meaning to recreate this recipe so thank you so much. Sincerely. I can finally get my fix!

  4. I'm a BC IPA full bodied beer fan, but was visiting friends in Bellingham WA this weekend, The gave me some Athletic 0% beer and I was truly impressed. Tons of flavour and you can work or drive afterwards. Nice that you picked them up as a sponsor Pai!

So.. since nobody actually explained what this Wingz Zabb powder taste like and I was so much sold on Pai from her wording "You should really really really try this…", I ended up ordering the Cayenne pepper powder and True lime juice powder (I had the rest ingredients at home) and made it myself..

    So, what does it taste like? Sour + sweet + smoky + spicy… individually fighting each other w/o blending… Think of it like just a small bits of the raw ingredients separately poured on your mouth at the same time and close your mouth. Meh…

    So.. IMHO, it's a big pass for me…

  7. Honestly, KFC makes some decent to even pretty good food in a lot of countries, EXCEPT in North America for some odd reason. Surprisingly, one of my worst KFC meals ever was in Cincinnati, Kentucky!

  9. here in singapore, we still are wishing KFC added the devil drumlets to the menu permanently, its the only time i ever eat KFC, when those reappear on the menu.

  11. I hate cayenne pepper it is cheap heat with no flavour and is inconsistent even if you use the same brand all the time. I do love my chillis my greenhouse is full of different varities, but eye watering heat without flavour is just away to hide poor ingredients or waste good ingredients. We will make a batch of the spice powder blend minus any chilli and them experiment with our own dried chilli to see which we prefer, also with and without msg. Thank you for the recipe, this is the part we love, where we play and make our own spice blends. Take care, God bless one and all.
