    Looks like the ending of ‘chamberete’, the one used for ‘caldo de res’, when they’re from the middle there’s ton of meat but in the end it’s a lot of cartilage and some fat

    Pig’s foot (pata de puerco), most likely. Added for flavor, as the connective tissue melts into the soup and adds another dimension.

    When I was a kid, I used to think it was gross and never touched it. As an adult, it is incredibly delicious. Wrap the soft tissue in a tortilla and have at it.

    The most delicious bit to make a taco with.
    Add chopped onion, cilantro and limonsito and taste the food of the gods.
