




So I’m new to this sub Reddit and the only reason why I’m typing this one is because I’m curious as to why the Caldo on the left the broth is much clear and the one on the right is more murky. My mom made it and for some reason it’s either comes out like the first or the second one. Does anyone know why when it’s like the first one when the broth is clear whenever it’s murky it feels like the taste is not there anymore. Does it have something to do with the ingredients the amount of water she puts or is it the pot?
Also for the first one I bought a pot but it’s mainly used for making tamales but I was told you can also make soup with it and when my mom made Caldo in that it turned out much clear which is the first picture but when we use it for let’s say three days for the last day it burns the vegetables on the bottom and it kind of makes the Caldo taste burnt at the end but it’s not like that for second one any ideas call my favorite food but I’m starting to not like it that much anymore because I prefer it when the broth is clear it just taste better in my opinion I don’t know can I get feedback?

I have three theories
1.- Look at the amount of fat floating on top between dish 1 and dish 2. Was a different sort of meat used? Was there bone in there for one and not for the other? That changes the flavor depth.
2.- When the water started boiling, did they remove the white bubbly substance on top for one and not the other? That might be making the broth murky and the taste a bit different.
3.- What was the texture of the vegetables? In they were overcooked in the murky one, it could be that a few got mushed and the flavor got muddled with the flavor of the broth.
Ps. Unless you’re not cleaning the pot, it shouldn’t make a difference in the clarity of the broth or the flavor , it’s aluminum, it’s not great at keeping a consistent temperature but it’s perfectly serviceable and doesn’t impart flavor unto food like say, barro might.
