  2. Looks amazing! I would eat all of this. Only suggestion is to use habanero. Even as a show piece, habanero is quintessential Maya. Also, look into recados (marinade pastes) and use them, they come in different colors. Great work.

    It looks great, you are very talented.

    Problem is that i see european courses and techniques that could have been easily subtituted by actual maya ones. I get that you tried to take inspiration from what you understood by “maya cuisine” but you understandably confussed maya with Yucatan food… thus serving sikil-pak with bread, when you had the tortilla chips that goes with it, or making chiles rellenos that are not maya but nahua, when you could have used that same venison and pumpkin seeds to cook a very yucatan styled [pipian sauce](https://solquintanaroo.mx/sugerencia-del-dia-pipian-de-venado/)

    I’m not gatekeeping or hating here, just making an honest criticism about what you cooked.
