Ingredients:

10 to 15 fat green chillies
1/2 tablespoon jeera (cumin seeds)
1/2 tablespoon rai (mustard seeds)
1/2 tablespoon hurba (fenugreek seeds)
1/2 tablespoon somf (fennel seeds)
Salt to taste
1/2 tablespoon amchur (dried mango powder)
Dhaniya powder (coriander powder)
A pinch of hing (asafoetida)
1/2 cup hot mustard oil

Instructions:

– Wash and dry the green chillies. Slit them lengthwise, keeping them intact at the stem.
– Grind jeera, rai, hurba, and somf into a coarse powder.
– In a mixing bowl, combine the green chillies with the ground spice powder.
Add salt, amchur, dhaniya powder, and a pinch of hing. Mix well.
– Heat mustard oil until it reaches the smoking point. Allow it to cool slightly.
– Pour the hot mustard oil over the spice mixture and green chillies. Mix thoroughly.
– Let the pickle cool to room temperature before transferring it to a clean, dry jar.
– Allow the pickle to marinate for at least a day before consuming. It will enhance the flavors.
