Hot & Sour Soup is a traditional Thai dish that is hot and sour. It’s really simple recipe to make and you can make it as hot and sour as you want. Add roasted chili sauce to make it super hot!!! or less lime juice for less sour flavor. It’s all up to you. The idea is to enjoy the flavors of this soup which is called Tom Yum. The word Tom means the boiling process (basically soup) and the word Yum refers to a kind of Lao and Thai spicy and sour salad.
Ingredients:
1 boneless chicken breast or 6 large prawns (shitake mushrooms as a vegetarian substitute)
3 cups chicken stock or stock of choice
5-6 hot chili peppers, chopped or broken with a pestle
8 ounces fresh mushrooms, halved (I used sliced bella mushrooms)
1 thumb size or 2-3 slices of galangal (ginger can also be used)
1 lemon grass stick, cut into 1 inch in length
1-3 Kaffir lime leaves, torn in half
6 cherry or grape tomatoes
4 tablespoons lime juice
3 tablespoons fish sauce
1 teaspoon palm sugar (brown sugar can be used as a substitute)
2 tablespoons chopped cilantro
1 tablespoon roasted chili sauce .
Directions:
1. In a large pot or pan, add the lemon grass, kaffir lime leaves and bring to boil over medium heat.
2. Add the chicken, fish sauce, lime juice, and sugar; cook slowly uncovered for 10 minutes. If you’re using shrimp, add them with the tomatoes and mushrooms.
3. Add tomatoes, mushrooms, half the chopped cilantro, and chili peppers and cook for 5 more minutes. Remove from heat.
4. Garnish with leftover cilantro, or not.
