►Ingredients For the Pakora

►Spices

2 tbsp coriander seeds
2 tsp cumin seeds
1 tsp carom seeds
1 tbsp coriander powder
2 tsp cumin powder
1 tbsp red chili
1 tbsp crushed red chili flakes
2 tsp turmeric
1 tsp black pepper
1 tbsp pomegranate seeds

►Vegetables & Pakora Mixture

2 medium sized or 300g red onions
Large handful or 100g spinach
Handful or 30g coriander
6 – 7 or 25g green chilies
4 – 5 or 700g white potatoes
2 cups or 250g gram Flour
1/2 cup or 120g plain flour
Store some mixture for later use if required (don’t add salt/water if storing)

2 tsp salt (taste and adjust if needed)
3 – 4 tbsp water (use a little more if needed)

►For the Chili and Potato Pakoras

8 – 9 large green bullet chilies
3 – 4 or 500g white potatoes

Batter Prep

2 cups or 250g gram Flour
1/2 cup or 120g plain flour
Same spices as before
2 tsp salt or to taste
1 cup or 250ml water

1 litre sunflower oil for frying

►For a Simple Green Chutney

Handful fresh coriander and mint
3 green bullet chilies
Some water
Salt to taste

Yogurt based Green Chutney

1 cup natural yogurt
1/3 cup green chutney
1 tsp coriander powder
1/2 tsp cumin powder
Salt to taste

The end of the video for a surprise without further Ado let’s get started whole Chef present let’s start with the spices for the pakora grab your mortar and PC in with the coriander seeds now you want to lightly crush them they’re going to add a beautiful Aroma and

Flavor to our pakoras something like that you’re looking for remove that onto a plate it with the cumin and caram seeds again you want to lightly crush them remove it onto the plate it with the coriander powder cumin powder red chili crushed red chili flakes it with a turmeric coarsely ground black pepper

Finally some of the pomegranate seeds and we’re going to add the salt later a good mix to that and set aside for the vegetables I’m using a red onions you want to thinly slice them using here some of the spinach you want to roughly chop it using get some of the fresh coriander

You don’t want to chop it too fine we don’t want to lose that flavor of the coriander green chilies you want to finally chop them and finally we going to thinly slice the potatoes cut them in the middle and cut them into chunks and now we can thinly slice

Frying pan or a walk turn up the heater on medium and in with the sunflower oil you could also use mustard oil or ghee instead now remove some of the mixture for later use I’m going to store this in the fridge add a good Ed of salt into

There here I’ve got some water you only need to use few tablespoons just so the mixture comes together just going to start with a bit of water that a mix now if you like more softer kind of pakora you can throw in some of the yogurt and

Also some of the baking soda a little bit more water and bring the mixture together like so this is exactly what you’re looking for when you hold the pakoras in your hand they should have this shape how a taste of the salt it’s perfect all right

The oil is nice and hot now let’s start frying up pakoras it’s around a tablespoon full of mixture do not overcrowd this yeah we’re going to let these cook for around 7 to 8 minutes on medium heat just leave the pakoras there for around 2 minutes do

Not touch it’s been around 2 minutes now we can slowly start to move them around make sure the oil goes all around the porus we’re looking for a nice golden brown color on them just turn them around smells so so good trust me one of the best pakoras ever make sure to turn

Fresh milk me in there with the chilies you can add more or less depending on your liking now if I want making this sauce for the auras I would definitely add some of the ginger or garlic now adding some of the water and you want to blend this to a smooth consistency

  4. That's a banger. I feel like people sleep on pakora because where I am in NY, it's only an appetizer. Putting them in a wrap is brilliant. I've made pakora a few time and the last couple of times I dusted them with corn starch before frying, and it added a crisp that I like. That second chutney you made, with the yogurt, I'm gonna have to try. It reminds me of a chutney mixed with raita, which is something I do at restaurants but I've never tried at home. My man!
