Easiest CHICKEN & RICE One Pot Recipe You’ll LOVE! One pot Thai chicken and rice:

2 lbs chicken legs
½ bag frozen bell peppers
½ an onion, chopped
4 cloves garlic, minced
½ can coconut milk
1 cup water
1 cup jasmine rice
2 tbsps Green curry paste
1 tsp kosher salt
½ a zucchini, chopped
jalapeno slices
cilantro

In a large pot, sear the chicken legs until golden brown about 5 minutes each side. Be sure to season it with salt and pepper before cooking. Remove the chicken and any excess oil.

Next, saute the onion, bell peppers, garlic, and zucchini until tender, about 3 minutes. Add thai green curry paste, 1 tsp kosher salt and mix with the veggies.

Add coconut milk, water, jasmine rice. Smooth the rice out and nestle
the chicken on top.

Bring the liquid to boil and then simmer on medium / low heat for 20-25 minutes until the chicken is thoroughly cooked and rice is fluffy. Garnish with jalapeno and cilantro.

Green curry chicken and rice one pot meal first we’re going to start by searing off the chicken season it with some salt and pepper I’ll just go ahead and remove the chicken wipe off any excess oil add the onions first then I’ll add my frozen bell peppers zucchini

And garlic so while it’s still cooking I’m going to season it with some green curry paste add some coconut milk water and our rice and then right on top of everything we’re going to Nestle in our chicken so they all cook together now we’ll cover it and let it cook for about

20 minutes garnish it with some jalapeno slices usually on the chicken for people that like spicy food and then some cilantro and finally a squeeze of lime to brighten everything up coconut rice is already good but adding that layer of green curry into it is just delicious
