Quick note about chili recipes.. there are probably thousands of really good recipes for a home style chili. You can add tons of things like carrots and celery and a wide variety of chili peppers. Just be careful with some of these ingredients as they can easily make the dish too spicey for many people to enjoy. We always suggest you tinker a bit with it.. see what works best for you and your family and friends. We almost always opt to do the “less is more” thing and try to focus on the heavy hitting flavors, while also keeping the cost of the food in check. We hope you enjoy this version:

1. We use a small amount of Pancetta, cut finely to render some delicious fat which we can use to caramelize the onions and meats. A small amount of Pancetta is fine, 4 to 6 oz is plenty.
2. Fry separately, the onions, the beef and the hot Italian sausage. We use 1 onion and about a LB each of the beef and sausage. Brown and almost burn the meats a bit.. it will bring out more flavor.
3. Add everything back into the pan and now incorporate red peppers and other vegetables, tomato paste (about a tube) and minced garlic (1 TBSP).
4. For the spices, we use about a tablespoon of each of cummin, coriander, paprika, oregano and, a teaspoon of cinnamon, brown sugar and chili flakes. You can sprinkle in some thyme now, or after we add the tomatoes.
5. Some chefs like to add beer, but we think this alienates too many people and prefer to use beef stock. Stir well and add one 28oz can of peeled tomatoes.

That’s really all there is too it! Now it’s important to just simmer for a few hours.. we suggest a minimum of 2 hours, stirring and tasting every 20 minutes. We like to throw in a whole chili pepper, mostly for show. You can adjust the taste as you go by adding spices to taste.
