Mediterranean Stuffed Bell Peppers:

Preheat your oven to 375°F (190°C).
Cut the tops off bell peppers and remove seeds and membranes.
In a skillet, sauté chopped onion, garlic, diced tomatoes, cooked quinoa, chopped spinach, chopped olives, and crumbled feta cheese until heated through.
Season with salt, pepper, and dried oregano to taste.
Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
Bake for 25-30 minutes until the peppers are tender.
Serve hot, garnished with fresh herbs like parsley or basil.
