Chilli & ginger salmon + coconut spinach rice (serves 2)

Coconut spinach rice:
200g white basmati
1 garlic clove
125g baby spinach
150ml coconut milk
150ml water
Salt

Salmon:
2 x salmon fillets
2 garlic cloves
1 inch thumb ginger
1 tsp honey
3 tbsp EVOO
2 tbsp. soy sauce or tamari
1/4 tsp chilli
1 tsp. garlic powder
salt

Other:
1 red pepper
2 red onions
2 lemons

Tuna sun-dried tomato and feta fish cakes + minted peas (makes 6)

500g Potatoes
200g Cabbage
2 Spring onion
250g Tuna
80g Sun dried tomatoes
50g butter
100g Feta
1/2 tsp lemon (zest)
Salt & pepper
20g fresh parsley
15g fresh dill
50g plain flour
1 egg, beaten
150g breadcrumbs
4 tsp oil

Mint peas:
250g peas
2 tbsp crème fraichê
2 tsp olive oil
25g mint
15g dill
1 tsp. lemon juice
salt & black pepper

Pesto crusted cod (serves 2)

Pesto crust:
70g basil
2 garlic cloves
1 tbsp lemon zest
60ml extra virgin olive oil
50g softened butter
30g nutritional yeast
Salt

Cod:
300-400g cod fillets
Salt
Lemon juice

  9. First I press like, then I enjoy the beautiful presentation 🎉❤ Oh my, maybe fish cakes first because of simplicity ( new for me are feta and kale)salmon last only because of oven , its 30 degrees here…
