Easy beef chili that reminds you to never give up on your dreams #shorts



ingredients
– 2lb ground beef
– 2 chipotle chilies in adobo sauce (chopped)
– 3-4 tbsp chili powder
– 1 can kidney beans
– garlic
– adobo seasoning (or salt) to taste
– onion
– 2-3 tbsp butter
– 1-2 tsp oregano
– 1 tbsp cumin
– 1-2 tbsp fish sauce (very optional, just add a little extra umami)
– 2-3 tbsp tomato paste
– 1 can of tomatoes (can be crushed, but i like the texture of whole tomatoes after you break them up a bit)
– 1 cup chicken stock
– scallion (garnish)
– avocado (garnish)
– cheddar (garnish)
– corn tortilla chips (garnish)

steps
– sweat onions and garlic in butter
– add oregano, chipotle chilies, fish sauce, chili powder, and cumin. cook until fragrant (~1-2 min)
– add tomato paste and cook until deep red
– add ground beef and break it up with spoon/spatula, cook until no more pink.
– add adobo seasoning or salt
– add tomatoes, beans (drained), and chicken stock. Break up tomatoes with spoon/spatula if using whole tomatoes.
– bring to a boil, then simmer uncovered until desired thickness is reached (I usually do ~1 hour, but 30 mins is probably sufficient)
