Salsa

My Favorite Basic Salsa

Have been working on perfecting my basic salsa. I think I’ve finally gotten it to where I want.

First picture is it blended, I just use a magic bullet. The second picture is no blending. This recipe is flexible to taste.

Recipe:
1 can (14.5oz) petite diced tomatoes with juice
1 Finely diced small sweet onion
1-2 Serrano peppers finely diced (I mix this up depending on the spice level I’m aiming for. I tend to like 1 Serrano peppers with seeds/membrane) can be substituted with jalapeño for mild
1/3 cup packed chopped Fresh cilantro
Salt (start with 1 1/2 teaspoons)
2 limes
1 Bay leaf (preferred) or 1 tsp MEXICAN oregano
Garlic to taste (start with 1 large clove) I prefer using a microplane but finally diced works too
1/2 can water

Directions:
In bowl combine all ingredients except bay leaf, stir
Add bay leaf
Cover and refrigerate for 8 hours minimum – 24 is what I generally do.

After marinating time remove bay leaf, feel free to leave as is (or blend part or all)
