Basic, Classic, Cantonese, Hong Kong, Chinese-American Fried Rice recipe.
Basically, a poorman’s Yangzhou (fancy) fried-rice without the expensive, fancy, rare ingredients (eg: sea cucumber, dried scallop, etc). (also known/spelled as: Yeung Chow, Yang Chow, Young Chow, Yung Chow, etc.).
“House Special” or “Combination” fried rice
Panda Express or Chinese-Restaurant fried-rice
Fried Rice:
1:1 ratio (rice:water) cooked Jasmine white rice
(1:1.25 [rice:water] ratio absolute maximum… ideally dried in fridge since mushier)
Veg. oil, don’t be shy wid it
Onion, diced
Carrot, diced
Leftover Chair-Siu or Chinese sausage (lap cheong / chong) ), diced
1-2 eggs
Salt
MSG
White pepper
Chicken bouillon powder (optional)
Green peas
Green onion
Note: Do Not add garlic Nor regular soy sauce; as it overpowers and overshadows the deliciously mild, sweet char-siu or Chinese sausage flavors.
If you’re really desperate for color, only use Dark soy sauce; as Dark soy sauce doesn’t really add any flavor nor change the overall flavor-profile of Chinese fried-rice.
“House Special” fried-rice additions (all optional):
Fresh shrimp, shelled & deveined
Fresh beef, thinly sliced
Fresh chicken, thinly sliced
Romaine lettuce or cabbage, about 1″ wide sliced
Bean sprouts
Salt & Pepper Chicken via Frozen Chicken Strips Hack:
Cantonese Hong Kong style (fresh aromatics fried/sautéed in oil):
Veg. oil
1/2-1 jalapeño, thinly sliced (or fresh Thai red chili for spicier, or bell pepper for milder)
1-5+ garlic cloves, minced (can go as high as 10-15+ cloves)
Couple dried red chili
1-2 green onion sliced (sub: 1/4-1/2 onion diced)
1/2-1” ginger minced (optional)
1-2tbs dried baby shrimp, pre-soaked (optional)
Taiwanese style (like a boba/tea shop, Popcorn Chicken, Taiwan street vendor/stall, etc.) (dry seasonings only):
1/2tsp salt
1/4-1/2tsp white pepper
1/4-1/2tsp black pepper
1/4tsp 5-spice powder
1/4-1/2-3/4-1tsp of cayenne or other spicy red chili powder (depending how spicy you want it)
Deep-fried Thai basil leaves to a crisp
