today we’re going to be seeing Jack’s famous ChileĀ 
and I’ve been warned with this video I’ve beenĀ Ā 
warned with the others in the past and I couldn’tĀ 
even imagine how bad they would have turned outĀ Ā 
so today I’m hoping that this one isn’t goingĀ 
to be that bad because we did review his pizzaĀ Ā 
video and if you haven’t seen that video you mayĀ 
be pleasantly surprised at that so after watchingĀ Ā 
this one be sure to watch it if you are new toĀ

guys okay today is my church event called theĀ 
Chili Bowl and what they do is they do flagĀ Ā 
football seven on seven teams and they do a chiliĀ 
cook off chili and football what could go wrongĀ Ā 
I was from Philly but they got rid of me so I’mĀ 
going with the Giants let’s see if the Giants winĀ Ā 
there in first if the Eagles win so I’ve enteredĀ 
for the first time I’m going to try and win theĀ Ā 
chili uh competition I don’t know there may beĀ 
three people that show up there may be 100 peopleĀ Ā 
show up I have no idea all I know is that um I’veĀ 
kind of altered some chilies and things I’ve likedĀ Ā 
in chilies I’ve done from the past so I’ve got itĀ 
right here uh I’m just going to show you guys whatĀ Ā 
I’m making this will Air after the competition I’mĀ 
probably never entering the competition again so IĀ Ā 
don’t care if people know my recipe but I don’tĀ 
want them to know the recipe before the eventĀ Ā 
happens o we’re going to be seeing Jack’s topĀ 
secret chili recipe today I hope it’s a good oneĀ Ā 
or is there a reason why he’s not wanting anyoneĀ 
to know what’s in it before he actually makesĀ Ā 
recipe H okay so it’s all awesome ingredientsĀ 
we’ve got salt and pepper for Taste two cans ofĀ Ā 
penel beans this is some of the magic this is uhĀ 
Chipotle in Adobo sauce this is where the heat forĀ Ā 
my chili is coming from right here and that’s itĀ 
I’m not putting any chili powder in or anythingĀ Ā 
it’s going to be the Smoky goodness of this ifĀ 
anyone’s wondering what type of Adobo sauce thisĀ Ā 
is actually in in Mexico they have their own typesĀ 
of adomo so unlike Filipino Ado they use chiliesĀ Ā 
and spices and with chipot chilies they normallyĀ 
put tomato garlic and other spices and herbs inĀ Ā 
it to make it well super tasty and then I gotĀ 
a can of corn tomato paste IPA beer La lintasĀ Ā 
this beer this is an IPA this is what I use onĀ 
my sausage sliders remember and it foamed upĀ Ā 
got all caramell tasting this is an amazing beerĀ 
to cook with okay now normally I don’t cook withĀ Ā 
beer I normally cook with wine but but there areĀ 
recipes that you do add beer to it or you can toĀ Ā 
make a tasty recipe the thing is though dependingĀ 
on what type of beer you’re going to be adding itĀ Ā 
can affect the flavor greatly ipas again dependingĀ 
on what they are can add a bitterness to the beerĀ Ā 
or depending on the Hops that are actually in theĀ 
IPA it can add a little bit of fru or sweetness toĀ Ā 
it so before actually adding the beer to whateverĀ 
you’re going to be using is a good idea to get aĀ Ā 
couple and taste it before and and see if you’llĀ 
like that flavor then you got diced tomatoes youĀ Ā 
got three things of black beans garlic two jars ofĀ 
your salsa whatever salsa you like we’re going toĀ Ā 
dice up an onion I’ve got Italian sweet ItalianĀ 
sausage and then let’s clear this off becauseĀ Ā 
this is what’s going to win it for me I thinkĀ 
is this beautiful smoked brisket I cooked itĀ Ā 
for 12 hours this is leftovers something tellsĀ 
me that I should be a little worried right nowĀ Ā 
what Jack’s going to be showing us you guysĀ 
remember last year I did I had a smoke brisketĀ Ā 
and it was it was amazing absolutely beautifulĀ 
look at this oh is that is that a work of artĀ Ā 
can you see that look at that outer crust thereĀ 
that it’s just it’s just gorgeous gorgeous JackĀ Ā 
actually called this gorgeous to be honest this isĀ 
something that a ghoul would be eating in FalloutĀ Ā 
and yes I did see this series and now I can’t stopĀ 
playing the games let me know guys if you’ve seenĀ Ā 
the Fallout series that just came out on AmazonĀ 
and if you can’t stop playing the games as wellĀ Ā 
because you know can’t get enough of it thisĀ 
is the meat we’re not using ground beef nobodyĀ Ā 
uses ground beef anymore if you want to win aĀ 
contest people don’t use ground beef and chiliĀ Ā 
anymore to win competitions yes they do all theĀ 
time I mean maybe in some places they don’t butĀ Ā 
you don’t just use brisket people use groundĀ 
meat or ground beef as well to make chili soĀ Ā 
we’re going to dice up this brisket down belowĀ 
is the seasoning I used on this brisket and thenĀ Ā 
smoked it on my Trager for 12 hours uh so youĀ 
know everything I use but the key ingredient onĀ Ā 
this I’m going to tell you right now is it loveĀ 
I use ground Swedish coffee and I think it wasĀ Ā 
brown sugar and chili powder and uh onion andĀ 
garlic but to be honest though it looks bad theĀ Ā 
brisket it really does especially with this grayĀ 
color but that’s the myoglobin that’s actuallyĀ Ā 
oxidized probably the hardest thing we’re goingĀ 
to do is just cook our sausage that’s all weĀ Ā 
got to cook everything else is already madeĀ 
so let’s get that get that in the pan right
now yeah baby yeah [Music] baby no justĀ 
trying it on nothing like a Sizzle okayĀ Ā 
this is when it gets interesting thisĀ 
is when we put everything togetherĀ Ā 
I love the meat that’s the key so we’ll putĀ 
that much in for now that’s the brisket sameĀ Ā 
with the sausage I can’t put all the sausageĀ 
I want in most of it I can that’s about it allĀ Ā 
right maybe a little more there we go that’s aboutĀ 
it going to drop my onions in there well this isĀ Ā 
already turning into a chili I don’t think it’sĀ 
going to win I mean just tossing everything inĀ Ā 
the [Ā __Ā ] poot and hoping that it’ll turnĀ 
out to be a tasty chili my beans there we
go there’s the
corn Tomatoes The Garlic pink see if I can shakeĀ 
out the paste come on come on too lazy to get aĀ Ā 
spoon you know what’s a shame if he was too lazyĀ 
to get a spoon for this couldn’t he have been tooĀ Ā 
lazy to make the video then so we didn’t have toĀ 
watch this that’s what I’m talking about rightĀ Ā 
there salsa oh it’s getting full it’s gettingĀ 
full I don’t know what I’m going to do we’reĀ Ā 
going to pour the beer in yes it will cook off theĀ 
alcohol I’m going to be cooking a long time fromĀ Ā 
this there we go beautiful look at it reacting andĀ 
bubbling what a waste of a perfectly good IPA so IĀ Ā 
chopped up all the Chipotle peppers and the AdoboĀ 
sauce it’s all mixed in here now I just took aĀ Ā 
quick little taste to make sure it’s perfectĀ 
it’s a perfect balance of everything perfectĀ Ā 
balance of everything I don’t think so at leastĀ 
everything’s cooked or has been cooked and he’sĀ Ā 
not tasting this raw like the chicken hi for 1 toĀ 
two hours I mean you want to get it out to a boilĀ Ā 
first and then put it on either medium or lowĀ 
depending on like how much power your cookingĀ Ā 
surface or your crock pot has and then let itĀ 
cook for a long time but one to two hours on
I okay so this is the this is competition overĀ 
here all the teams are getting ready for sevenĀ Ā 
on seven football station camps here and BeachĀ 
footballs here oh poor people they don’t knowĀ Ā 
what’s going to happen I’m just imagining rightĀ 
now like a mass food poisoning oh oh my okay ohĀ Ā 
no what did we e what are you doing it’s comingĀ 
under me like lava and I’m not going to tell youĀ Ā 
which one is mine I won’t tell you which one isĀ 
mine not at all I can’t tell you which one I thinkĀ Ā 
we get the hint Jack yeah your chili is numberĀ 
one I wonder who wrote the stickers so here’s theĀ Ā 
deal um I’m at the Chile competition and I canĀ 
tell you right now I’m not going to win let meĀ Ā 
tell you why number one I don’t cheat but numberĀ 
two they’re letting everybody here vote which oneĀ Ā 
they think is the best and I don’t think that’sĀ 
good I think you have neutral designated judgesĀ Ā 
so I’m going to go on record saying that I’mĀ 
probably not going to win today a good littleĀ Ā 
moral lesson is this I used to back pipe a lot IĀ 
used to compete every single weekend for severalĀ Ā 
years and the one thing that I always had to keepĀ 
in mind was that you could only do the best thatĀ Ā 
you can do and then it’s up to the judges and inĀ 
this case it’s not up to the judges it’s up to allĀ Ā 
the people but still it’s something that shouldn’tĀ 
take so seriously especially when it’s not thatĀ Ā 
important I mean what’s going to happen you’re notĀ 
even going to get a little trophy that saying thatĀ Ā 
you won the best chili contest at school it’s notĀ 
important some people can take competition veryĀ Ā 
seriously and this the only time I’m doing thisĀ 
competition cuz I’ve already shown the recipes HĀ Ā 
see this is what I mean why does it matter try notĀ 
to poison everyone and have fun that’s it okay soĀ Ā 
there were some nice people great Chili’s I didn’tĀ 
win first second or third place I wonder who wonĀ Ā 
the competition if anyone was actually there atĀ 
the chili competition I know it was a long timeĀ Ā 
ago but if you were there then let me know who wonĀ 
and if you tasted Jack’s chili let me know whatĀ Ā 
you thought about it I’m curious actually to seeĀ 
you know just what is all this stuff put togetherĀ Ā 
what does it tastes like know when you go to anĀ 
apartment building and you smell other people’sĀ Ā 
cooking on each floor and you’re going where theyĀ 
cooking that plus crap all right guys I will talkĀ Ā

everything was fully cooked in this recipe thisĀ Ā 
is a good thing uh a lot of the ingredients uhĀ 
especially all the canned products everything wasĀ Ā 
canned everything was canned except for the bloodyĀ 
brisket and the sausage and the onion that’s it soĀ Ā 
personally speaking this is not anything closeĀ 
to how I make my own chili I have various chiliĀ Ā 
recipes and none of them are like this if you haveĀ 
made this chili recipe let me know what you thinkĀ Ā 
but I have to say that out of all the ingredientsĀ 
the one that looks the worst is actually theĀ Ā 
brisket but considering that everything elseĀ 
was canned it probably wasn’t the worst letĀ Ā

  3. IPA seems strange for chili. If I was using beer for chili I'd first think of stout. My favorite chili booze is Johnnie Walker Red Label, the peat smoke really makes it work… though I'm really thinking a nice imperial cream stout might beat it. I really have to try that.

  5. Hahaha šŸ˜‚ I agree with you. Ever since I saw the whole Fallout show I just can’t stop playing the game. It’s just that good and awesome of a game. If it was up to me I’d play it for the rest of the year or even till next year. Cuz you can do so much in the game. The building is what takes up most of the time for sure lol šŸ˜‚

  6. Man I bet everyone who ate that Chili got sick for sure man. And once they find his video of him making his chili that’s full evidence for any of them to sue him for food poisoning cuz that brisket has got to be another year old brisket or the other half of the year old brisket. Like WTH dude.
    Nobody in their right mind would serve a year old brisket just wow

  8. A few things:

    So Jack says not to use ground beef, but he’s basically using ground pork since he’s using sweet Italian sausage, which he’s clearly just crumbled after cooking. Also the seasonings in Italian sausage do not work in chili.

    Apparently there were a couple news reports from the chili bowl that people were throwing Jack’s chili in the bin. That’s what I saw from some comments but I’ve never been able to find the reports myself

    Jack claimed he chopped the chipotle peppers in adobo sauce but you could clearly see when he took them out that they were already chopped

    Jack complained about them letting everyone else vote, but that’s how all chili cook offs work (at least all the ones I’ve seen)

    You can tell how bitter Jack is about losing, he’s always thought of himself as the greatest cook ever, despite 0 knowledge, so whenever someone proves he’s not as good as he thinks, he acts like a child in a huff.

  9. I dont get it it's like he just throwing random chit into a pot and it's all premade tinned trash.
    It isn't even hard to make a tomato sauce base and it will be infinitely better than anything you can buy it's actually impressive that he made it look hard.

  10. year old brisket, canned beans, canned chili, canned everything, store bought sausage, he really didn;t make anything for this… I guess he made the brisket? but like couldn't even be asked to cook his own beans to develop the flavor…

  11. As long as is edible, it's fine to served I guess. Just us to decide whether to eat or not. For me, I can't eat that.

  12. Sometimes it is more important to know its not that important and to just do the best you can.

    I remember for a halloween party i wanted to do something crazy and made green mac-n-cheese. I went through so much more effort to make it look all halloweeny and tbh… it was probably the best mac n cheese i ever made. But because it was green people didnt care for it. Lol. Except the few people that tried it. They liked it. I kinda let that dictate my attitude instead of have fun at an event where everyone else was having fun. And it wasnt even a competition.

  14. James, I love your stuff, and I'm sure I'll get flack for saying it, but this type of content is beneath you. Used to be that your channel featured a steady stream of recipes, but now it's all reaction videos, and for what? Nobody is forcing you to watch "Jack" – he isn't a celebrity chef like Jamie Oliver. The only reason his videos are popular is because they are promoted by youtube content creators for the sole purpose of mocking him. And have at it, I guess – he puts himself out there, I suppose it's fair game. But it's like reacting to "Kays cooking" – yah yah, we get it, let's all have a laugh at the parochial, lower-middle-class losers and their trashy affectations. And don't kid yourself, that's all this is – jeering at your perceived lessers in the most condescending way possible (all the canned ingredients, tsk tsk!). More broadly, is this your goal with the channel now? One carbonara video sandwiched between dozens of reaction vids and desperate attempts to be recognized by uncle roger? If so, that's kind of a bummer. I understand if this just goes into the ignore pile, but it's some genuine feedback from a longtime fan who really respects your work.

    You're actually pretty close to completion! There's one more major stop: Aunt Myrna's Party Cheese Salad. Unfortunately, this is a required stop, and uh, you're probably not going to like this one

  18. @ChefJamesMakinson – I would like to suggest you stick to cooking videos of recipes made by yourself, rather than reviewing vile garbage by amateurs, I suppose you could intersperse them with videos of you visiting and ordering meals at restaurants and then rating them out of 10…

  19. Hey James, could you perhaps prepare the "original" texan chilly (aka no beans) ? Always wanted to do that but the recipes I found I am not entirely convinced by.

If I were to make Chili… I'd get a chuck steak, give it a hot smokey grill sear on some wood fire, then throw it in the insta pot with spices and CARMELIZED veggies till it fell apart… I wouldn't use leftover frozen cooked meat, you want something that will cook and release juices into the chili. Also if you use beans, use soaked dry beans so they take on the chili flavor. Also remove the sausage from the casings! They're gonna fall off and be rubber bands in the chili.

  21. Not sure if you caught on to this fact: The brisket looks awful because it was made a year prior and was in the freezer. People were warning you about this video because of the danger that brisket posed to the people who ate it.
