I love all kinds of hot sauces going WAAAY back (anyone else use to order from Mo’ Hotta’ Mo’ betta’s print catalog?), but Tabasco has always been something I keep
Around. It’s clearly nothing special but it is kind of classic in its purity. Obviously it’s a great ingredient, and for some reason Tabasco in ketchup (50/50) with fries is sublime to me. Also it was my first hot sauce and I used to shake it onto my mom’s brisket.
However, this stuff is next level. Made with the same peppers, it’s aged longer and has some wine in it. Very unique tasting and I like it on a corn chip unlike basis Tabasco which I only use very rarely and only in very specific instances
It takes a very basic sauce and elevates the complexity of the stuff.
