


This is one of four new sauces Butterfly Bakery of Vermont recently released. As soon as I saw them I knew I had to get them all, and this is the first one I decided to open.
I’d never considered the potential of cabbage or caraway in a hot sauce but this absolutely works.
The initial taste is of the ripe red jalapeños and carrots along with the vinegar and salt, intensely savory and full in flavor, almost similar to a Marie Sharp’s sauce.
Then the cabbage comes in on the back of the palate changing the dynamic with a bit of a sauerkraut kick when mixed with the vinegar, followed by that hint of caraway that gives the true bread and German undertones.
Like most BBoVT the texture is thin, but I’m personally good with that as it makes it easy to pair with many foods.
I just tried it with a turkey sandwich and it was a great match. I’ll have to see how it goes with pastrami on rye and shepherd’s pie later on but I’m expecting good results.
