


This is another of the four new sauces Butterfly Bakery of Vermont recently released.
I’ve always loved Serrano sauces so I was excited for this one.
Heat-wise this one is very mild, not really any hotter than Frank’s or Crystal, but it packs a huge whallop of flavor.
It’s a very summery fresh tasting sauce. The tomatoes are at the forefront, but they’re the flavor of fresh vine-ripe summer tomatoes and not like an Italian tomato sauce. There is that vegetal Serrano flavor and a great tartness from the lemon juice used in place of vinegar.
You taste all of the supporting flavors as well – the sweetness from the carmens (sweet peppers), the garlicky pungency of the garlic scapes, that bite from the smoked onions, it’s a symphony of flavors.
I’ve really enjoyed this on seafood, the lemon and tomato notes make it a natural pairing IMO, but great with anything you’d like to add bright tart summery note to.
