The biggest change from the original Medusa is the switch from the JP Piranha powder to scorpion flake. It may seem like a small change, but the difference between the two peppers does make a pretty big difference.
One of the biggest differences between this and the original is how much of the flavor of the fruit comes through. This one is definitely a lot sweeter and allows you to taste the fruit itself a little better. I love the sweetness from the mango and the touch of tanginess from the passion fruit (one of my personal favorite flavors). The flavor is balanced out with the addition of onion and black garlic, giving this sauce a great umami profile. Mad Max aka @thenotoriouschef1 doesn’t mess around when it comes to flavor.
It does lose a little bit of the initial bite from the switch away from the JP Piranha, but it’s definitely not much milder. This is a seriously hot sauce, perfect for the chilihead, a challenge for the casual heat lover, and a potential day wrecker for the inexperienced.
If you love the original Medusa, (or for the sake of this sub, love great tasting hotter sauces) this is a sauce that you absolutely need to try. The way that this builds on that original sauce is a fantastic experience.
Ingredients: 7 pot primo mash, smoked passion fruit, smoked mango, apple cider vinegar, red wine vinegar, bell pepper, brown onion, black garlic, moruga scorpion flake, tajin, salt, pepper, smoked paprika, chili powder
