If you find the regular Tabasco to have too harsh a vinegar flavor this may be just what you’re looking g for.
It’s the same basic three ingredient recipe as original Tabasco with two key differences. The distilled vinegar is replaced by white wine vinegar, which has a softer flavor and a subtle sweetness, and the peppers used are hand selected and aged for up to 8 years (vs up to 3 years for the standard sauce) so there’s a richer, mellower, and subtly more complex flavor from the pepper mash.
The overall effect is that this sauce is unmistakably Tabasco, but it’s Tabasco that’s more refined, gentler, and more complex on the palate.
