Spicy Marinated Peppers Recipe
Ingredients:
• 1 lb Anaheim peppers or long hot jalapeños
• 3-5 mini red peppers
• 3 garlic cloves, sliced
• 4-6 slices ginger
For the Marinade:
• 1/8 cup vegetable oil
• 1 cup soy sauce
• 2 tbsp sugar
• 3 star anise
• 1/2 cinnamon stick
• 3 bay leaves
• 10-12 dried chili peppers
• 1/2 tsp salt
• 1/2 tsp black pepper
• 1/2 tsp red chili flakes
Directions:
1. Cut the Anaheim peppers and mini red peppers into diagonal chunks. Slice the garlic and ginger.
2. Heat the oil over medium heat, then add star anise, cinnamon, bay leaves, dried chili peppers, soy sauce, sugar, salt, black pepper, and red chili flakes. Let it simmer for 3-5 minutes, then allow it to cool slightly.
3. Pour the marinade over the peppers and mix well until fully coated.
4. Let the peppers marinate for at least 2 hours (or overnight for deeper flavor) before serving.
Pair with rice noodles, steamed buns, or serve as a flavorful side dish with congee, dumplings, or grilled meats. Enjoy!
