This is my latest party Jollof recipe and it is totally worth trying. In this video, i did not roast my pepper mixture but instead, i used the boiling or will i say frying method.
Instead of blending your pepper mix before boiling into a paste, you are expected to fry the pepper chunks in oil, thyme, bay leaves, curry and seasonings.
For this video, the number of cups is actually 16 and not 12.

See ingredients below
Pepper mix – 40% Red bell peppers (tatashe)
20% Tomatoes
10% Red chili
10% Scotch pepper
Onions – i don’t want to put % to the quantity of onions cause i personally like to add enough of it.

Jollof Rice
Olive oil (2 cups
chopped or sliced onions (4 large)
Garlic (12 cloves)
Thyme (1/2 cup)
curry (2 tbsp)
ginger (depending on your prefeence)
Bay leaves (5 dried leaves)
Tomato paste (1/2 can)
Pepper mix (quantity above)
Goat meat stock
Water
