Tteokbokki – South Korean Rice Cakes 🔥
Rice cakes simmered in a sweet, fiery gochujang broth with fish cake & spices 🌶️🧄💥

Main Ingredients:
• 1 cup Korean Rice Cakes (Apexy brand on Amazon – soak if frozen)
• 4 sheets Fish Cake (cut in quarters – frozen item, usually at your local Asian market; dish is still great without) 🐟
• 1 Korean Onion (or substitute 1 small leek) 🧅
• 2 Garlic Cloves, minced 🧄
• 1 cup Chicken Stock 🍗
Sauce Mix:
• 2 tbsp Korean Red Pepper Flake (Taekyung brand, coarse version – Amazon) 🌶️
• 1½ tbsp White Sugar
• 1 tbsp Soy Sauce
• 1 tbsp Oyster Sauce 🦪
• 1 tbsp Gochujang (O’Food brand – Amazon) 🔴
• 2 tsp Vegetable or Avocado Oil
• ¼ tsp Black Pepper

Method:
1️⃣ Make the Sauce:
Combine red pepper flake, sugar, soy, oyster sauce, gochujang, and black pepper. Mix into a thick, spicy paste 🌶️🔥
2️⃣ Build the Base:
In a pan over medium heat, Add oil, sweat garlic and sliced onion until fragrant (2–3 min). Add the stock, and bring to a light boil. Stir in the sauce paste.
3️⃣ Simmer the Tteokbokki:
Add softened rice cakes and fish cake pieces (if using). Simmer for 8-12 min covered, (stir every 2 minutes to avoid sticking). When ready, the sauce should be thick and glossy, with soft and chewy rice cakes 🍜✨
4️⃣ Serve Hot:
Top with scallions, sesame seeds, or a soft-boiled egg if desired. Eat
immediately—this one’s best served hot and spicy 💥🔥
