
I’ve finally decided to start working on some spice tolerance after years and years of loving Indian and Thai food but being unable to bear what they consider “hot”. My goal is to eventually be able to take on the “Thai Hot” level of spice at a restaurant.
This week I started picking up some sauces and giving my palate a bit of a workout. I just found a fresh restock of Tabasco Scorpio. At the store today and figured dinner tonight would be a little wing gauntlet. Before each wing, I had 3 drops of each sauce on a spoon as a palate preparer. Then each bite got 6-8 drops of sauce.
Tabasco Chipotle. No heat at all on this but man if the flavor isn’t incredible. I could put this on almost anything. Absolutely love that smoked chipotle pepper scent and taste. The vinegar is not as pronounced as regular Tabasco, but still present enough to give things that awesome zing.
Original Tabasco. Very little heat, very vinegar-forward, but as a vinegar lover I have zero complaints. Always liked the original Tabasco, it just goes so well on countless things.
Cholula Extra Hot. This one just gives your toungue a nice little sizzle. The apple cider vinegar is very pronounced and I love the flavor it gives this sauce. A quick and mild burn that doesn’t linger. Definitely see this being a great taco sauce.
Tabasco Habanero. When I first got this a few days ago, a couple drops left me feeling hot in the face and drooling a bit. Now it’s not so bad. The heat is a slow burn, and the sweetness is the first thing I taste. I love the way the heat slowly comes up on the back end on this one.
Tabasco Scorpion. Just got this today. The sweetness as the start lasts only a fraction of the Habanero Tabasco, and the burn is much quicker and sharper. 6-8 drops per bite on the wing really had me sweating and tearing up. I had to add some relief blue cheese dressing to the final two bites on this one (in addition to the 6-8 drops of sauce). The burn lasted about another 10 minutes, my lips and mouth were stinging but nothing in the throat. This one is definitely hot and I’m sure I’ll pay for it tomorrow on the porcelain altar.
