Because it’s generic and they want to appear like they’re some sort of connoisseur with refined taste. It is a bit heavy on the vinegar but it does go well with some dishes. Its ubiquity speaks for itself.

Anyone who says it’s just vinegar is either being intentionally misleading or legitimately has an untrained sense of taste. Either way should not be listened to. Don’t get me wrong, there are ALOT of vinegar sauces out there. But Tabasco’s pepper and barrel aging is arguably the most unique process out there for a commercial sauce, let alone a goliath. It’s its own sauce, and while you may not like it, it should be appreciated for what it is.
