Arabian Chicken Mandi Recipe🍗 | Eid Special Chicken Mandi

✨Ingredients

🔹For Marination
4 pieces whole chicken legs
1 tbsp ginger garlic paste
2–3 tbsp oil
½ tsp cardamom powder
½ tsp cinnamon powder
1½ tsp Kashmiri red chilli powder
½ tsp turmeric powder
1 tsp cumin powder
1 tsp black pepper powder
1½ tsp salt (or as per taste)

🔹For Rice
1/3 cup oil
1 large onion (sliced)
1 tbsp ginger garlic paste
1 cinnamon stick
4–5 cloves
4–5 green cardamom
1 tsp cumin seeds
1 tsp coriander seeds
1 black cardamom
1½ tsp black pepper
Salt to taste
¼ tsp turmeric powder
3.5 cups basmati rice
1 litre water (or as needed)
1 tsp soaked saffron

🔹For Garnishing
Fried nuts (cashews, almonds, resins)

✨Method
1. Marinate the chicken with oil, ginger garlic paste and all the spices.
Let it marinate for 1–2 hours.
2. Cook in a pan on medium heat until fully done and slightly roasted.
3. For garnishing, roast the dry fruits separately and keep aside.
4. Heat oil in a pan. Add onion and ginger garlic paste and sauté well.
5. Add whole spices, salt, turmeric powder and black pepper powder. Sauté for a few seconds.
6. Add rice and water and cook until almost done.
7. Add soaked saffron water and cook on dum for 5 minutes.
8. Place the chicken pieces on top of the rice and give charcoal smoke for authentic mandi flavour.
9. Garnish with fried nuts.

✨Serve hot with:
Tomato Chutney , yogurt garlic dip and salad
