I love rice but I have never cared for Mexican rice. I use the same seasonings in other dishes so I should like it but for some reason I don’t. Give me refried or black beans. I do love enchiladas verde.
Both are one of my favorites plus, there's always a bowl of Mexican Rice in the refridge as a side for just about everything, especially fried eggs !

There was a chain in San Antonio when I was there for training . They had THE BEST Green Chicken Enchiladas. I can't remember the name, but I'm sure they're still around.
