Creamy Tomato & Roasted Red Pepper Gnocchi 🍅🥣
A friend of mine once said that I can make a sauce out of almost anything and this creamy tomato & roasted red pepper sauce is a perfect example! 😍🙌🏻
This sauce is so easy to make, it’s pairs perfectly with pasta or gnocchi and you can add whatever protein you like! From beans and chicken to tofu, just add what you have on hand 🙌🏻
Ingredients:
200g cherry tomatoes
1 tbsp olive oil
100g roasted red peppers (I used jarred peppers)
50g cream cheese
120ml double cream
Salt & pepper
1/2 tsp Italian herbs
1/2 tsp chives
1/2 tsp paprika
1/2 tsp chilli flakes
Handful of fresh basil, chopped
100g -150g frozen spinach
1 bag @pasta_rummo gluten free gnocchi
Method:
1. Preheat your oven to 200C. Toss the tomatoes in olive oil and roast for 20 minutes.
2. Add the roasted tomatoes, roasted red peppers, seasonings, cream cheese and double cream to a blender and blend until smooth.
3. Cook the gnocchi to the packet instructions. Add the sauce to a pan with the cooked gnocchi, chopped basil and frozen spinach. Stir until well combined and the spinach is cooked.
I served mine with some fresh mozzarella, a sprinkle of parmesan and some fresh parsley. It’s so delicious and so so simple! 😍🍅
