Ratatouille, Better than The Movie! 🐭

🍱 Recipe Ingredients:
3 tbsp olive oil
4-5 cloves garlic
2 capsicums/bell pepper (roast and cover for 5 minutes. remove skin and add to pan)
1 small onion chopped
1/4 cup sliced carrots
3-4 Tomatoes
Mixed herbs 1 tsp
Salt and pepper to taste

Assembling:
2 eggplants
2 zucchini – or bottle gourd (lauki)
3-4 tomatoes
Olive oil to brush
Mixed herbs, salt & pepper for seasoning
