Pepper and vinegar combo recommendations

last year, we made 20 small-batch fermented hot sauces. Many of them use our homemade vinegar. Homemade vinegar is a game changer. That's why I'm looking for suggestions.

Vinegars made so far:

Pineapple

Cherry

Blueberry

Raspberry

Mango

What would your combo be? Other vinegars can be made, but I need to start now because it takes about 3 months from start to finish.
