Pressure Cook:
∙ Kachha Aam [Raw Mango] — 1 medium
Okhli mein Crush karein [Crush in mortar pestle]:
∙ Kali Mirch [Black Pepper] — 8 to 10
∙ Jeera [Cumin Seeds] — 1 tsp
∙ Lahsun [Garlic Cloves] — 4 to 5
∙ Hari Mirch [Green Chilli] — 1 to 2
Tadka:
∙ Sarson ka Tel [Mustard Oil] — 1 tbsp
∙ Pyaaz [Chopped Onion] — 1 medium
∙ Curry Leaves — 8 to 10
∙ Tamatar [Chopped Tomato] — 1 medium
∙ Namak [Salt] — swad anusaar [as per taste]
∙ Hara Dhaniya [Coriander Leaves] — garnish ke liye
📌Recipe Steps [Vidhi]
∙ Kachhe aam ko pressure cook karo — high flame pe 2 whistles lene do [Pressure cook raw mango for 2 whistles on high flame]
∙ Thanda hone ke baad chilka utaaro, pulp aur boiled paani alag rakho [Once cooled, peel and separate mango pulp and boiled water]
∙ Kali mirch, jeera, lahsun, hari mirch okhli mein dardara crush karo [Coarsely crush pepper, cumin, garlic, chilli in mortar pestle]
∙ Kadhai mein sarson ka tel garam karo, pyaaz golden hone do [Heat mustard oil, sauté onion till golden]
∙ Curry leaves aur tamatar daalo, achhe se bhuno [Add curry leaves and tomato, sauté well]
∙ Aam ka pulp, crushed masala, boiled paani aur namak daalo [Add mango pulp, crushed masala, boiled water and salt]
∙ 2 to 3 minute simmer karo, hara dhaniya daalo aur serve karo [Simmer 2–3 minutes, garnish with coriander and serve]
