Three tomatoes. 1/4 onion. One garlic clove. Salt. Pepper. The most humble ingredients making an extraordinary dish. She whipped those egg whites by hand every single time. No electric mixer. No shortcuts. Her arms never complained. I used to skip the sauce as a kid. I’d give anything to eat it her way now.
She liked using Queso Fresco. I am using Queso Oaxaca for the melt. Everything else is exactly hers.
