Aaj maine finally capture kiya maa ki heirloom recipe — Bharela Gunda Sabji. No shortcuts. No substitutes. Bilkul waise jaise saalon se banta aaya hai.

The trickiest part of this recipe? Prepping the gunda. But once that’s done — it’s all maa’s magic.
Wash & dry gunda. Smash gently, add salt to manage stickiness, remove seeds.

Stuffing (mortar-pestle):
1½ tbsp peanuts • 1 tbsp sesame • 10-12 garlic • 2 green chillies • juice of ½ lemon • 1½ tsp sugar • salt • 1 tsp jeera dana • 2 tsp jeera dhaniya powder • 2 tsp chilli powder • 2 tsp oil — pound well. Add 1½ tsp besan + 1 tbsp coriander, mix.
Stuff each gunda generously.
In a pan, crackle jeera + rai, add hing. Add stuffed gunda, cover & cook 10 mins. Add leftover stuffing with 1 tbsp water, mix & cook 2 more mins.
Dry, flavourful, and stays good without refrigerator. 🙌
