Welcome back to episode 6 of my Soup for the Soul series.
Today we are making roasted red pepper soup 🤍
There’s something about roasted red peppers…
soft, smoky, and just so comforting ❤️
This one feels like a quiet evening in a bowl.
Simple ingredients, big flavor, and that cozy soup mood we love.
Ingredients:
• Red bell peppers
• Onion
• Garlic
• Olive oil
• Salt + pepper
• Chili flakes
• Vegetable broth
• Cream (optional, for garnish)
Steps:
Roast peppers until slightly charred.
Sauté onion + garlic in olive oil.
Add roasted peppers and broth.
Simmer for 10–15 mins.
Blend until smooth.
Finish with cream and chili flakes.
Topped it with some homemade croutons for that extra crunch 🤌
Perfect with some toasted bread on the side 🤍
