Spicy Soy Chunks Fry | Easy Protein-Packed Masala Recipe for Rice & Chapati

A quick and tasty soy chunks fry made with simple Indian spices! First, soy chunks are soaked in hot water, squeezed well, and marinated with curd and spices. Then shallow fried in coconut oil and tossed in a spicy onion-tomato masala. Perfect with rice, chapati, or paratha. Super protein-rich and full of flavor!

Ingredients
For boiling soy chunks:
Soy chunks
Hot water
For marination:
Turmeric powder
Kashmiri chili powder
Pepper powder
Garam masala
Salt
Curd (yogurt)
For frying & masala:
Coconut oil
Ginger (chopped/paste)
Garlic (chopped/paste)
Green chilies (chopped)
Onion (sliced)
Tomato (chopped)
Turmeric powder (little)
Kashmiri chili powder (little)
Pepper powder (little)
Garam masala (little)
Salt
1 tsp ketchup
Coriander leaves
Curry leaves (optional)
Lemon juice

Method
Soak soy chunks in hot water for 5–10 minutes.
Drain, squeeze well, and rinse again 1–2 times. Keep aside.
Mix soy chunks with turmeric, chili powder, pepper, garam masala, salt, and curd. Marinate well.
Heat coconut oil and shallow fry the soy chunks until golden. Keep aside.
In the same pan, add a little oil.
Sauté ginger, garlic, and green chilies.
Add onion and cook till soft.
Add tomato and cook well.
Add little turmeric, chili powder, pepper, garam masala, salt, and 1 tsp ketchup. Mix well.
Add fried soy chunks and mix until well coated.
Finish with curry leaves, coriander leaves, and lemon juice.
