Spicy Thecha Pulav🔥🌶️
🥜 1. Roasted Peanuts
• 2 tbsp peanuts
Roast on medium-high until golden. Cool and crush coarsely. Keep aside.

🌿 2. Thecha (Spicy Green Paste)
• 5 green chillies
• 10–12 garlic cloves
• 2 tbsp peanuts
• Handful fresh coriander
• Pinch cumin seeds
• Salt to taste
• Splash of water
Method:
Dry roast chillies, garlic, and peanuts until slightly charred.
Add cumin seeds, cool, then grind with coriander, salt, and water into a smooth paste.

🥕 3. Veg & Paneer Prep
• 1 small onion (sliced)
• 1/3 small cabbage (shredded)
• 1 small capsicum (sliced)
• 1 carrot (julienned)
• 1 medium tomato (sliced)
• 200–250 g paneer (cubed)

🍚 4. Cooking
• 1 tbsp groundnut oil
• ½ tsp cumin seeds
• Curry leaves (optional)
• Salt to taste
• Pinch sugar
• 2–3 cups cooked rice
Steps:
1. Heat oil, add cumin seeds & curry leaves.
2. Add onions, sauté lightly.
3. Add all veggies, cook on high flame (keep slightly crunchy).
4. Add thecha paste, paneer, salt, sugar → mix well.
5. Add cooked rice and gently combine.

• Crushed peanuts
• Juice of ½ lemon
• Fresh coriander
Mix lightly and serve hot.
