Black Pepper Beef

Marinate the Beef

For 250 g tenderloin beef, thinly sliced:
* 1 tbsp soy sauce
* ½ tsp salt
* 1 egg white
* 1 tsp Shaoxing wine (optional)
* ¼ tsp MSG (optional)
* ½ tsp sesame oil
* ¼ tsp white pepper
* 1 tbsp cornstarch

Marinate for 15–20 minutes.

Sauce

Mix in a bowl:

* 120 ml chicken stock
* 1½ tbsp soy sauce
* 1 tbsp oyster sauce
* 1 tbsp tomato sauce or chili sauce
* 1–2 tsp fresh ground black pepper
* 1 tsp cornstarch (maizena)

Vegetables & Aromatics

* ½ onion, sliced
* ½ green bell pepper, sliced
* ½ red bell pepper, sliced
* 2–3 cloves garlic, chopped
* 1 spring onion, cut into pieces

1. Heat up a wok or pan Add oil, then spread the beef in one layer.

2. Cook quickly over high heat until about half cooked and lightly browned.Remove and set aside.

3. In the same pan, add a little more oil if needed.Stir fry onion, green pepper, and red pepper until slightly softened but still crisp.

4. Add garlic and spring onion, then stir fry briefly until fragrant.

5. Pour the black pepper sauce into the pan.

6. Stir continuously and let it simmer until slightly thickened and glossy.

7. Return the half-cooked beef to the pan.

8. Toss everything together until the sauce thickens and coats the beef beautifully.

Serve immediately with hot rice.
