No bread? No problem! Made this healthy and delicious sandwich using homemade steamed sooji bread loaded with veggies and creamy paneer sauce.

Ingredients:

* 1 cup sooji
* 1/4 cup curd
* 8-10 spinach leaves
* 2 tsp oil
* 1-2 tsp salt
* 1/2 cup sooji
* 1/4 cup water
* 1 tsp eno
* Mixed seeds (pumpkin seeds, flax seeds, sesame seeds, sunflower seeds)

For Filling/Sauce:

* 6 paneer cubes
* 1/3 cup thick curd
* 2 Kashmiri red chillies (soaked)
* 5 garlic cloves
* 1 cheese cube
* 1/4 tsp salt
* 1/4 tsp black pepper
* 1/2 tsp oregano
* 1/2 tsp chilli flakes
* Cucumber slices
* Onion slices
* Tomato slices

Method:

1. In a mixer jar, add sooji, curd, spinach leaves, oil, salt, and water. Blend into a smooth batter.
2. Transfer the batter to a bowl, add eno, and mix gently.
3. Pour the batter into a greased mould/container and sprinkle mixed seeds on top.
4. Steam for 15-20 minutes or until cooked completely. Cool slightly and demould.
5. For the sauce, blend paneer, thick curd, soaked Kashmiri red chillies, garlic, cheese cube, salt, black pepper, oregano, and chilli flakes until smooth.
6. Slice the steamed bread into halves. Spread the prepared sauce, then add cucumber, onion, and tomato slices. Cover with another slice.
7. You can enjoy it as it is, or optionally toast on a pan with a little butter or oil until golden and crisp.
