🍲 Minimalist Stuffed Pepper Soup (Water-Based, No Vegetables)📋 Ingredients Green bell peppers: 6–8 pieces
Ground meat: 400g (minced beef, pork, or turkey)
Rice: 3–4 tbsp (rinsed)
Onion: 1 piece (finely chopped, to go inside the meat)
Water: 1.5–2 liters
Salt and black pepper: to taste
Bay leaf: 1–2 leaves (optional, for subtle aroma)
🥣 Step-by-Step Instructions
Make the Stuffing: Mix the ground meat with the finely chopped onion and rinsed rice. Season well with salt and black pepper.Stuff the Peppers: Clean the seeds out of the peppers and pack them tightly with the meat mixture. Leave a tiny bit of space at the top for the rice to expand.Place in the Pot: Arrange the stuffed peppers tightly upright or on their sides in a deep pot.Pour the Water: Pour cold water into the pot until it just covers the peppers.Simmer: Bring to a boil over medium heat and skim off any foam from the surface. Lower the heat, cover with a lid, and simmer gently for 35–40 minutes.Season the Broth: 10 minutes before it finishes cooking, add salt and a bay leaf to the boiling water.Serve the peppers hot in deep bowls, ladling the pure, flavorful meat broth right over them.
