Help! Is this mold or weird smoke residue on my peps?

I have dehydrated peppers for years without any issues. I’ve done smoked peppers before without any issues.

But this time… I need some help! Just like I’ve done before, I pulled a couple bags of peps out of my deep freeze, washed them, and then threw them on the smoker for a couple hours. At this point I’d usually pull them off and go right into the dehydrator, but this time I rinsed the peppers before putting them in the dehydrator – a step I normally don’t do, but I did it this time because previous batches were a little bit tacky due to the residue and didn’t grind the way I wanted.

Now normally I do about 24-28 hours, and this batch is at 20 hours looking WILDLY different than previous batches. Pic included from previous batch

Is this mold or did I just obliterate this batch on the smoker?
