Ingredients: • 450g chicken with bone (skinless, curry cut) • 7–8 light green mild green chillies • 5–6 dark green spicy chillies • 1 cup coriander leaves (tightly packed) • 1 pc lemon juice • 1 tsp turmeric powder • 1.5 tsp salt (adjust to taste) • 1 tbsp Everest chicken masala (or similar) • 2 tbsp oil • 2 tbsp crushed ginger-garlic (equal parts) • 2 medium onions, finely chopped • 1 tbsp Coriander powder • 1/2 tsp Kashmiri chilli powder • 1.5 cups water (approx., divided) • 2 tsp cornflour + 2 tbsp water (for slurry) • 1 tsp soy sauce • Fresh coriander for garnish
Method: 1. Prepare the green paste: Grind coriander leaves, mild green chillies, and spicy chillies with a splash of water to form a thick paste. 2. Marinate the chicken: In a bowl, mix the chicken with turmeric, lemon juice, salt, Everest chicken masala, and the green paste. Set aside for 15–20 minutes. 3. Sauté aromatics: Heat oil in a kadhai. Add crushed ginger and garlic, sauté for 30 seconds, then add chopped onions. Fry until onions turn light brown. Then add the coriander powder and Kashmiri chilli powder and cook for another 2-3 mins, Season lightly. 4. Cook chicken: Add the marinated chicken to the kadhai. Mix well and adjust salt if needed. Cover and cook on medium heat for 5–6 minutes until the chicken starts releasing its juices. 5. Simmer: Add about 1 cup of water, cover again and simmer for 10–12 minutes or until the chicken is tender. 6. Thicken the sauce: Stir in cornflour slurry and soy sauce. Cook uncovered for 2–3 minutes until the gravy thickens to your liking. 7. Finish and serve: Garnish with fresh coriander and serve hot with rice or chapatis.
