Recipe: – Dice 4-500g of good quality steak into 1.5 inch cubes and marinade with 2tbsp olive oil, 1tbsp minced garlic, 1tbsp cape herb & spice steak seasoning and a dash of salt and pepper. Set aside to marinade while you cook potatoes. – Grab 4-5 large potatoes, peel and cube them into 1.5 inch cubes, then toss them in 2-3tbsp olive oil, 1tsp salt, 1tsp garlic powder, 1 tsp paprika, 0.5tsp chilli and dash of pepper. – Roast your potatoes at 220c in a large baking tray (single layer), for about 40-45 mins, turning occasionally until golden and crispy edges all round. – When your potatoes have 10 mins to go, get a lightly oiled pan smoking hot, and then add your steak bites. Leave them untouched for 1.5 mins to sear. Flip and cook for a further 1.5 mins. Then toss them around to seal all sides for a further 1.5 mins and remove and set aside. – To the same pan, add 2tbsp butter, 4 minced garlic cloves, a chopped chilli and zest of 1 lemon and sautee for 1-2 mins. – Add the potatoes and steak back to the pan with a handful of fresh chopped parsley and toss aggressively to coat.
Caesar Dressing: – Mix 4tbsp mayonnaise, 1tbsp olive oil, 0.5tsp Dijon mustard, 0.5tsp Worcester sauce, dash of lemon juice and 2tbsp finely grated parmesan until smooth. – Toss large of a nice crisp lettuce in the sauce until coated and ready to serve.
