We are currently about a week into a 35-40C (95-105f) heatwave. On Monday I finally moved all my peppers (Reapers, Scorpion, and Bishop's Crown) into 20l (5 gal) pots. They were starting to be root bound and drank the whole pot before midday in the heat. The soil is a mix of compost, tomato substrate, and about 10% perlite by volume. Few cm of drainage at the bottom and wood chips on top. I watered them heavily after repotting. But they didn't need water since. The soil is still moist. Why are the peppers drinking so little? I was expecting having to water them about every 3 days, not the soil being moist after 6 days in 35C+ heat. Is this ok or do I need to change something? They are in a greenhouse where they get direct sun from morning until about 15:00. I leave the greenhouse fully open to get maximum air circulation in this heat.

roots are probs still settling after that repot, give em a sec
Like others have said, roots haven’t filled the pots fully to suck all the water up. It’s not a bad thing as long as they start drinking when you see lots of roots busting out of the pot.
