
Wife has been telling me all my sauces are great but she wants some more heat. I usually use either habenaros or Serranos as my heat, nothing crazy or over the top because I want others to enjoy it. Who am I to say no to more spice!

How do you make your sauces? I’ve been fermenting mine for nearly a decade now…I feel old…anyways, I digress. I had this problem with my sauces. I loved playing with fruit and veggies. I had heard about blueberries and coriander going well together, flavorwise. I decided to try this in a sauce of my own. I took it to a buddy who is a fellow hot sauce lover, and a bit of a foodie himself. He told me how coriander has a sour flavor profile. He also mentioned the sour flavors make things spicier. I was intrigued, yet doubtful. I did some research. Sour changes the shape of the pain receptors on your tongue and throat, allowing more capsaicin in, making less spice seem hotter. This was a game changer for me. Still not extremely hot, but the flavor with the heat is unbeatable! Try it out!
