  2. I used to do my nacho cheese/queso like this (sub cider/wine/beer for milk), but I switched to sodium citrate (which your cheese has) to avoid the roux stage altogether and work with just about any cheese. Would be hard to go back!

  3. This is exactly how I make my nacho cheese! Better than anything out of a can or jar. Great for homemade pretzel bites!

    Roll out a sheet of pillsbury original pizza dough. Cut in to 3×1 strips. Roll 'em up, boil in water with baking soda until they puff up a bit. Hit 'em with coarse salt, and in to the air fryer 400° for about 6 minutes. Smother with as much butter as your heart can take, and boom easy snack! Enjoy!

  4. I have an idea! I'm gonna do this but substitute the jalapeno juice for Giardiniera w/juice with American/provolone and drizzle it all over some thinly sliced beef. Italian beef/Philly cheese steak sandwich crossover, baby!

  5. I frequent a 'central Texas' style, bbq restaurant, and they serve a queso cheese sauce that has a gentle, but noticeable smokiness. The sauce has what I think is paprika and/or a sprinkle of cayenne pepper, and a bit of yellow onion. It also has what is our favorite reason for having this cheese sauce, it is random cut, rough cut, Jalapeno peppers, some bits are small,1/4" cuts, others might a full bite all by itself! I'm thinking the smoke flavor is coming from the Jalapeno's spending some time in the smoker pits. Have you smoked Jalapeno's, and, if so, how do you do it. I see no sign of fire blistering on the skin, they are just tender bits of Jalapeno with 'smoke flavor' coming from 'somewhere'. I have asked the manager, and he said, "We do not use Velveeta in our cheese sauce"!
