Root bound peppers

Hi guys I have two root bound peppers plants that I have been growing indoors under grow lights and they have been become root bound I think. When I pull them by their stem they get out the pot with the soil. But I don't have room to repot them because I plan to take them with me to college in a dorm. I don't know what should I do is it okay to trim the bottom of the root ball and add new soil? I have been looking online and it says that can kill pepper plants so idk what should I do? Also I didn't notice the one with curled leaves had dry soil and I think she dried out faster than usual because she got root bound.

    I’ve been in way worse places than that with roots.

    Probably not worth repotting at this stage as they are already fruiting.

    Add a tray underneath the pot, keep that tray topped with water – Assuming you have holes in the bottom of those pots.
